What is wheatgrass juice?

It is the liquid derived from squeezing fresh wheatgrass through a specialist juicer. Wheatgrass was first identified in the 1940's as having significant nutritional value after Dr Charles Schnabel, an American scientist, led research studies in which he made direct nutritional comparisons of wheatgrass against other vegetables such as spinach, broccoli and alfalfa. Similar studies were also carried out by a Japanese pharmacist and medical doctor, Dr Yoshihide Hagiwara, which again highlighted wheatgrass and its sister grass, barley grass, as providing a wonderful balance of valuable nutrients, vitamins, minerals, amino acids, essential fatty acids and enzymes.

It was in the 1950's in America that Ann Wigmore first started juicing wheatgrass. Having suffered from ill health most of her early life Ann, using the principles taught to her by her grandmother, a self-taught naturalist, found that wheatgrass was the most nutritious of all the different types of greens she tried.

She modified an old cast iron meat grinder and by doing that, she created the first ever wheatgrass juicer! Furthermore, the chlorophyll molecule in green plants is almost identical to the haemoglobin molecule in human blood. The difference being that the central element in chlorophyll is magnesium, whereas in haemoglobin it is iron.
